Making cannolis is fun and easy if you buy the shells and make the filling at home. You will need a pastry bag or plastic bag with a hole cut in the corner to squeeze the filling into the shells from both sides. Great for parties!

Ricotta filling
Drain the ricotta the night before for at least 8 hours to get as much water out of it as you can.
Whisk with the icing sugar, once it is nice and creamy, add the chopped candied fruit (you can also add chocolate chips).
Use a pastry bag to pipe the ricotta into the cannoli shells from both ends. Dust with powdered sugar and deep the two ends in ground pistachio nuts.
Remember to fill the cannoli just before serving them. If you fill them too early, the ricotta cream can get the shell soggy.

For Christmas this year, Pam Marraccini made a Lasagna Bolognese for her family and Nancy and Ed’s families made the traditional Cappelletti Soup. Deb made Polenta Verde this week, Minestrone soup for Christmas Eve and Ricotta Christmas Cookies, Eva’s favorite! Cookie pics and recipe to come!

Eva is in the kitchen making ricotta cookies. This has become her yearly tradition after her Irish roommate in college introduced them to her. Yesterday, Deb made two batches of Biscotti Prato (almonds, no butter). I thought I’d try something new and added dried cherries. On the stove is Uncle Vic’s bolognese sauce for lasagne tonight. Making homemade lasagna pasta as well.
Every year I bake a date nut bread that is made with black strap molasses and walnuts. This year I added candied cherries. It’s becoming more like the fruit cake my Mom sent us each year at Christmas. It came all the way from Texas. Next year I’ll add candied orange and pineapple and maybe a little rum!
I know some of you are are making cappelletti. Yum! Between the cousins, we could start an Italian restaurant!
